At Taisho, the grill is the heart of the room. Skewers are tended over fierce charcoal, turned by hand and served the moment they’re ready.

02 / Our story

Est. 2009 · Herne Bay

A family craft,
carried forward.

Chef Taka · Hiroshima → Auckland

Food shaped by a lifetime in Japanese kitchens.

Chef Taka grew up in the kitchen of his parents’ restaurant in Hiroshima, learning seafood, traditional seasoning and the quiet discipline behind Japanese cooking from an early age.

After more than two decades living and working in New Zealand, he opened Taisho to create a genuine Japanese dining experience in Auckland—one still connected to the family craft carried on by his brother and parents at Mamefuku in Japan.

Not simply a meal—an evolving family tradition.
